Ingredients
- 8 cups cooked rice ⓘ
- 1/2 pound meat (beef, ham, or chicken) ⓘ
- 3 cups chopped celery ⓘ
- 2 medium carrots, grated ⓘ
- 1 red bell pepper, diced
- 1/2 green bell pepper, diced ⓘ
- 1/2 cup diced onion ⓘ
- 1/2 cup sliced water chestnuts (optional) ⓘ
- 1 bunch green onions, cut ⓘ
- 1/2 cup oil (Mazola) ⓘ
- soy sauce to taste ⓘ
Instructions
- In a very large container or roaster pan, heat the oil over medium heat.
- Add the meat (beef, ham, or chicken) and stir-fry until cooked through, then push the meat to one side of the pan.
- Add the chopped celery and stir until it becomes clear and tender.
- Push aside the celery with the meat.
- Add the diced onion and cook until golden, then push aside with the meat mixture.
- Add the grated carrots and stir carefully to combine all ingredients.
- Add the cooked rice and stir carefully with a wooden spoon to mix evenly.
- Add the sliced water chestnuts (if using), diced bell peppers, and chopped green onions. Mix gently.
- Pour soy sauce over the mixture and stir carefully with a wooden spoon.
- Cover and let it sit until ready to serve.
