Ingredients

  • 8 cups cooked rice
  • 1/2 pound meat (beef, ham, or chicken)
  • 3 cups chopped celery
  • 2 medium carrots, grated
  • 1 red bell pepper, diced
  • 1/2 green bell pepper, diced
  • 1/2 cup diced onion
  • 1/2 cup sliced water chestnuts (optional)
  • 1 bunch green onions, cut
  • 1/2 cup oil (Mazola)
  • soy sauce to taste

Instructions

  1. In a very large container or roaster pan, heat the oil over medium heat.
  2. Add the meat (beef, ham, or chicken) and stir-fry until cooked through, then push the meat to one side of the pan.
  3. Add the chopped celery and stir until it becomes clear and tender.
  4. Push aside the celery with the meat.
  5. Add the diced onion and cook until golden, then push aside with the meat mixture.
  6. Add the grated carrots and stir carefully to combine all ingredients.
  7. Add the cooked rice and stir carefully with a wooden spoon to mix evenly.
  8. Add the sliced water chestnuts (if using), diced bell peppers, and chopped green onions. Mix gently.
  9. Pour soy sauce over the mixture and stir carefully with a wooden spoon.
  10. Cover and let it sit until ready to serve.
