Ingredients

  • 2 lb. beef stew meat
  • 3 to 4 potatoes
  • 3 to 4 carrots
  • 2 ribs celery
  • 3 small onions
  • 1 (28 oz.) can tomatoes
  • 1/4 cup water
  • 5 Tbsp. Minute tapioca
  • 2 Tbsp. Worcestershire sauce
  • 1 Tbsp. brown sugar
  • 1 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 tsp. ground allspice
  • 1/4 tsp. dried marjoram
  • 1/4 tsp. dried thyme
  • 1 bay leaf
  • 1/2 cup chopped fresh parsley

Instructions

  1. Preheat oven to 300°F.
  2. Cut beef stew meat into bite-size pieces.
  3. Peel and cut potatoes into pieces slightly larger than the meat.
  4. Clean and cut carrots, celery, and onions into 1-inch pieces.
  5. In a large baking dish or slow cooker, combine all ingredients except for parsley.
  6. Cover and bake for 5 hours without stirring.
  7. Just before serving, stir in chopped fresh parsley.
