Ingredients

  • 2 Tbsp. margarine, softened
  • 1 c. sugar
  • 3 eggs, separated
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • Juice and grated rind of 1 lemon
  • 1 1/2 c. hot milk
  • 1 (9-inch) unbaked pie shell
  • Cool Whip or 1/2 pt. heavy whipped cream

Instructions

  1. Cream the margarine and sugar together until smooth.
  2. Add the egg yolks and beat well.
  3. Mix in the flour, salt, lemon juice, lemon rind, and hot milk.
  4. Blend all ingredients thoroughly until smooth.
  5. Beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the lemon mixture.
  7. Pour the mixture into the unbaked pie shell.
  8. Bake at 350°F (175°C) for 35 minutes.
  9. Allow the pie to cool before topping with Cool Whip or whipped cream.
