Ingredients

  • 2 qt. water
  • 2 c. green split peas
  • 1 stalk celery, chopped coarsely
  • 1 large carrot, chopped
  • 1 small onion, chopped
  • 1/4 tsp. thyme
  • pinch of cayenne
  • 1 bay leaf
  • salt and pepper

Instructions

  1. Combine water with all ingredients in a large pot.
  2. Bring to a boil and cook hard for 20 minutes.
  3. Reduce heat and simmer for 45 minutes or until peas are tender.
  4. Strain through a fine sieve and reheat to boiling point.
