Ingredients

  • 1 Tbsp. olive oil
  • 2 c. chopped onion
  • 1 lb. Andouille sausage, cut into 1 inch pieces
  • 2 Tbsp. chopped garlic
  • 2 sprigs of fresh thyme
  • 2 bay leaves
  • 2 lbs. white potatoes, peeled and diced
  • 1 gallon chicken stock
  • 1/4 c. chopped parsley
  • salt
  • pepper

Instructions

  1. In a large pot, over medium heat, add the olive oil.
  2. When the oil is hot, add the chopped onion and sauté for 2 minutes.
  3. Season with salt and pepper.
  4. Add the sliced sausage and continue to sauté for 2 minutes.
  5. Stir in the chopped garlic, fresh thyme sprigs, and bay leaves.
  6. Add the diced potatoes and chicken stock.
  7. Bring the liquid to a boil, then reduce to a simmer and cook for 30 minutes.
  8. Stir in the chopped parsley and season with salt and pepper as needed.
