Ingredients

  • 7 egg whites
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup hot milk
  • 1/2 teaspoon cream of tartar
  • 2 cups flour
  • 1 teaspoon vanilla
  • 1 tsp. vanilla

Instructions

  1. Grease the bottom only of the pan.
  2. Beat egg whites and cream of tartar until soft mounds form.
  3. Gradually add 1 cup sugar, beating until stiff peaks form.
  4. Set aside the meringue mixture.
  5. Combine flour, 1 cup sugar, baking powder, and salt in a bowl; mix well.
  6. Add vanilla and hot milk to the dry ingredients and blend at low speed until moistened.
  7. Beat for 2 minutes at medium speed.
  8. Gently fold the egg whites into the batter by hand until well combined.
  9. Pour the batter into the prepared pan.
  10. Bake at 350°F (175°C) for 30 to 35 minutes, or until the top springs back.
  11. Allow to cool.
  12. Frost and drizzle with chocolate glaze.
  13. Cut into squares and serve.
