Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 3 eggs
  • 1 cup sugar
  • 3/4 cup apple butter
  • 3/4 cup raisins
  • 1/2 cup chopped pecans

Instructions

  1. Preheat oven to 375°F.
  2. Lightly grease a 9 x 5 x 3 inch loaf pan.
  3. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, and ground nutmeg.
  4. In another bowl, beat the vegetable oil and eggs until well combined.
  5. Add sugar and apple butter to the wet ingredients, mixing thoroughly.
  6. Gradually fold in the dry ingredients until just combined.
  7. Stir in the drained raisins and chopped pecans.
  8. Pour the batter into the prepared loaf pan.
  9. Bake in the preheated oven for approximately 50 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then remove and cool completely on a wire rack.
