Ingredients

  • 2 c. sugar
  • 1 c. butter
  • 3 eggs
  • 1 tsp. baking soda
  • 3 tsp. baking powder
  • 6 c. plain flour
  • 2 tsp. vanilla
  • 2 tsp. cinnamon
  • 1/2 c. buttermilk
  • 1 qt. homemade apple butter

Instructions

  1. Preheat the oven and prepare 8 cake pans by greasing them with Pam spray.
  2. Cream together 2 cups of sugar and 1 cup of butter until smooth.
  3. Add 3 eggs and beat well to combine.
  4. Incorporate 6 cups of plain flour, 3 teaspoons of baking powder, 1 teaspoon of baking soda, and 2 teaspoons of cinnamon into the mixture.
  5. Add 1/2 cup of buttermilk and 2 teaspoons of vanilla, mixing well until the dough is very thick and resembles cookie dough.
  6. Divide the dough into 8 equal parts and pat each part into the prepared pans.
  7. Bake the layers until golden and cooked through (timing as needed).
  8. Once cooled, layer the cake with homemade apple butter and assemble.
