Ingredients

  • 2 c. plain flour
  • 1/2 tsp. salt
  • 1 c. sugar
  • 1 large tart apple, grated
  • 2 tsp. vanilla
  • 2/3 c. oil
  • 2 tsp. soda
  • 2 tsp. cinnamon
  • 2 c. grated carrots
  • 1/2 c. coconut
  • 3 eggs, beaten
  • 1/2 c. sliced almonds

Instructions

  1. Combine the flour, salt, sugar, cinnamon, and soda in a bowl; stir in grated carrots, grated apple, and sliced almonds.
  2. Make a well in the center of the mixture and add the beaten eggs, oil, and vanilla; stir until moistened.
  3. Spoon the batter into muffin pans.
  4. Bake at 350°F (175°C) for 20 minutes.
