Ingredients

  • 1 1/2 c. all-purpose flour
  • 1/3 c. granulated sugar
  • 2 tsp. baking powder
  • 1 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 1 egg
  • 1/2 c. milk
  • 1 c. finely chopped apple
  • 4 Tbsp. butter, melted
  • 1/3 c. chopped nuts
  • 1/4 c. firmly packed brown sugar

Instructions

  1. Preheat oven to 375°.
  2. In a large bowl, combine flour, granulated sugar, baking powder, 1/2 teaspoon cinnamon, and salt.
  3. In another bowl, beat the egg with milk, then stir in the chopped apple and melted butter.
  4. Add the wet ingredients all at once to the flour mixture and stir until just moistened.
  5. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full.
