Ingredients

  • 2 c. sugar
  • 1 1/2 c. cooking oil (Mazola)
  • 2 tsp. vanilla
  • 3 eggs
  • 1 tsp. salt
  • 3 c. plain flour
  • 1 1/4 tsp. soda
  • 2 c. chopped apples (prefer Stayman Winesap)
  • 1 c. chopped dates
  • 1 1/2 c. chopped pecans

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large mixing bowl, combine sugar, cooking oil, vanilla, eggs, and salt. Mix well.
  3. Add the plain flour and soda to the wet ingredients, stirring until just combined.
  4. Fold in chopped apples, chopped dates, and chopped pecans.
  5. Pour the batter into a greased tube pan or two loaf pans.
  6. Bake in the preheated oven for 1 hour and 25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool before removing from pans.
