Ingredients

  • 4 cups biscuit mix
  • 1/2 cup sugar
  • 2 cups canned apple slices, chopped
  • 1/4 cup milk
  • 2 teaspoons vanilla extract
  • 3 eggs
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 1/2 teaspoon nutmeg
  • 1/2 cup apple juice
  • 1 1/2 teaspoons lemon juice
  • 4 cups confectioners sugar
  • 1/2 cup toasted or tinted coconut

Instructions

  1. Combine biscuit mix and sugar in a bowl; add chopped apples, milk, vanilla extract, eggs, cinnamon, ginger, and nutmeg.
  2. Stir until the mixture is well blended.
  3. Knead the dough on a heavily floured surface until smooth.
  4. Roll out the dough to about 1/2-inch thickness.
  5. Cut out doughnuts using a floured 3-inch doughnut cutter.
  6. Heat oil in a pan to 400°F (204°C). Drop doughnuts a few at a time into the oil, about 2 inches deep.
  7. Cook each side for about 1 minute or until evenly browned.
  8. Remove doughnuts and drain on paper towels.
  9. Bring apple juice and lemon juice to a boil in a saucepan.
  10. Stir in confectioners sugar and beat until smooth to make the glaze.
  11. Spoon about 2 tablespoons of glaze over each warm doughnut.
  12. Roll half of the glazed doughnuts in toasted or tinted coconut.
