Apple Doughnuts

Ingredients
- 4 cups biscuit mix ⓘ
- 1/2 cup sugar ⓘ
- 2 cups canned apple slices, chopped ⓘ
- 1/4 cup milk ⓘ
- 2 teaspoons vanilla extract ⓘ
- 3 eggs ⓘ
- 1/2 teaspoon cinnamon ⓘ
- 1/4 teaspoon ginger ⓘ
- 1/2 teaspoon nutmeg
- 1/2 cup apple juice ⓘ
- 1 1/2 teaspoons lemon juice ⓘ
- 4 cups confectioners sugar ⓘ
- 1/2 cup toasted or tinted coconut ⓘ
Instructions
- Combine biscuit mix and sugar in a bowl; add chopped apples, milk, vanilla extract, eggs, cinnamon, ginger, and nutmeg.
- Stir until the mixture is well blended.
- Knead the dough on a heavily floured surface until smooth.
- Roll out the dough to about 1/2-inch thickness.
- Cut out doughnuts using a floured 3-inch doughnut cutter.
- Heat oil in a pan to 400°F (204°C). Drop doughnuts a few at a time into the oil, about 2 inches deep.
- Cook each side for about 1 minute or until evenly browned.
- Remove doughnuts and drain on paper towels.
- Bring apple juice and lemon juice to a boil in a saucepan.
- Stir in confectioners sugar and beat until smooth to make the glaze.
- Spoon about 2 tablespoons of glaze over each warm doughnut.
- Roll half of the glazed doughnuts in toasted or tinted coconut.
