- Prepare the 10-inch unbaked pie shell.
- Combine 3/4 cup brown sugar with 1/3 cup flour; sprinkle about 3 tablespoons of this mixture over the pie shell.
- Layer peeled and sliced apples in the shell, sprinkling each layer with the remaining sugar-flour mixture, reserving 3 tablespoons.
- Spread the top with 2 cups of mincemeat, reserving 1/2 cup for later.
- Arrange 8 peeled and cored apple rings on top of the mincemeat.
- Fill the centers of the apple rings with the remaining mincemeat.
- Sprinkle the pie with the remaining sugar-flour mixture and dot with 2 tablespoons of butter or margarine.
- Bake at 425°F for about 40 minutes, until apples are tender.
