Ingredients

  • 2 large eggs
  • 1 cup oil
  • 2 cups sugar
  • 1 tsp vanilla
  • 2 cups flour
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 4 cups raw apples, chopped
  • 1 cup nuts, chopped
  • 1 cup raisins

Instructions

  1. Mix eggs, oil, sugar, vanilla, flour, cinnamon, salt, and baking soda until smooth.
  2. Fold in chopped apples, nuts, and raisins.
  3. Pour batter into two large loaf pans or a Bundt pan.
  4. Bake at 350°F for about 1 hour, or until a toothpick comes out clean.
  5. Cool and optionally frost with cream cheese frosting.
