Ingredients

  • 1 1/2 cups sifted flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup melted oleo (butter)
  • 2 medium apples shredded
  • 2/3 cup brown sugar
  • 1 cup quick oatmeal
  • 1 cup chopped walnuts

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour a loaf pan.
  3. Sift together the flour, baking powder, baking soda, salt, ground cinnamon, and ground nutmeg in a large bowl.
  4. Stir in the brown sugar, quick oatmeal, and chopped walnuts.
  5. In a separate bowl, combine the eggs, milk, and melted oleo (butter).
  6. Add the wet mixture to the dry ingredients and stir until just combined.
  7. Fold in the shredded apples carefully to avoid overmixing.
  8. Pour the batter into the prepared loaf pan.
  9. Bake at 350°F (175°C) for 1 hour and 5 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the bread to cool for 10 minutes before turning out of the pan.
  11. Cool completely on a wire rack before wrapping.
