Ingredients

  • 1 cup flour
  • 1 cup rolled oats
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 2 eggs
  • 1/4 cup melted margarine or canola oil
  • 1 1/2 cups buttermilk
  • 1 to 2 grated apples

Instructions

  1. Mix the flour, oats, baking powder, and baking soda in a bowl.
  2. Stir in the buttermilk, eggs, and melted margarine or oil. Add more buttermilk if the batter is too thick.
  3. Fold in the grated apples.
  4. Heat a lightly oiled griddle or non-stick skillet over medium heat.
  5. Pour small amounts of batter onto the skillet to form pancakes.
  6. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
  7. Flip and cook for another 2-3 minutes until golden brown.
