Ingredients

  • 2 1/2 cups flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup sugar
  • 1/2 cup margarine
  • 1/4 cup buttermilk
  • 8 ounces egg substitute
  • 2 medium apples peeled and diced
  • 2 teaspoons vanilla

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 10-inch tube pan with non-stick spray or Pam.
  3. Mix flour, baking powder, and baking soda until blended.
  4. In a large bowl, beat sugar, margarine, and buttermilk for about 4 minutes.
  5. With a mixer on medium speed, alternately add the flour mixture and egg substitute until well blended and fluffy.
  6. Stir in diced apples and vanilla extract.
  7. Spread the batter evenly into the prepared pan.
  8. Bake for 1 hour or until golden brown and a toothpick inserted in the center comes out clean.
  9. Cool the cake on a wire rack for 10 minutes.
  10. Turn out onto the rack and cool completely.
  11. Dust with confectioners' sugar before serving.
