Ingredients

  • 6 thick pork chops
  • 1/4 cup milk
  • 1 cup soft bread crumbs
  • 1 cup finely chopped peeled apple
  • 1/2 cup raisins
  • 1 tablespoon melted butter
  • 2 tablespoons shortening or oil
  • 1/8 teaspoon salt
  • 1/4 teaspoon sage
  • 1 teaspoon salt

Instructions

  1. Cut pockets in the pork chops along the bone.
  2. Pour milk over bread crumbs to soften them.
  3. Stir in finely chopped peeled apples, raisins, salt, sage, and melted butter into the bread crumbs.
  4. Stuff each chop with about 1/4 cup of the filling.
  5. Brown the stuffed chops in shortening or oil.
  6. Pour off the oil when browned.
  7. Season with pepper and salt.
  8. Cover tightly and simmer for 45 minutes to an hour.
