Ingredients

  • 2 1/4 cups oatmeal
  • 1 1/4 teaspoons cinnamon
  • 1/4 cup chopped nuts
  • 1/2 cup skim milk
  • 2 egg whites
  • 2 tablespoons vegetable oil
  • 1 raw apple, chopped
  • 1/4 cup brown sugar
  • 1 tablespoon baking powder
  • 1/4 cup raisins
  • 3/4 cup frozen apple juice concentrate

Instructions

  1. Mix dry ingredients: oatmeal, cinnamon, baking powder, brown sugar, nuts, and raisins.
  2. In a separate bowl, mix skim milk, apple juice concentrate, egg whites, and vegetable oil.
  3. Add the wet mixture to the dry ingredients and stir until combined.
  4. Fold in the chopped apple and nuts.
  5. Line muffin tins with paper baking cups and fill with batter.
  6. Bake at 425°F (220°C) for 17 minutes.
  7. Allow muffins to cool before storing in a plastic bag in the refrigerator.
