Spinach Cups

Ingredients

  • 9 (1/2 oz.) slices whole wheat bread
  • vegetable cooking spray
  • 1 (10 oz.) package frozen chopped spinach, thawed
  • 2 tsp. margarine
  • 1/2 cup finely chopped onion
  • 1/2 cup cream cheese
  • 1 (2 oz.) jar diced pimento, drained
  • 1 small clove garlic, minced
  • 1 tsp. hot sauce
  • 1/8 tsp. salt

Instructions

  1. Trim bread crusts and flatten slices with a rolling pin.
  2. Cut bread slices into quarters.
  3. Press bread quarters into mini muffin pans coated with cooking spray.
  4. Bake in a 350°F preheated oven for 5 to 7 minutes or until lightly browned.
  5. Drain frozen chopped spinach and press between paper towels to remove excess moisture.
  6. Coat a large skillet with cooking spray and melt the margarine over medium heat.
  7. Add chopped onion and sauté for 4 to 5 minutes.
  8. Stir in spinach and cook for 2 to 3 minutes until thoroughly heated.
  9. In a bowl, combine cream cheese with diced pimento, minced garlic, hot sauce, and salt.
  10. Add the spinach mixture to the cream cheese mixture and stir well.
  11. Spoon about 2 teaspoons of the filling into each bread cup.
  12. Bake at 350°F for 5 minutes or until thoroughly heated.
