Ingredients

  • 3/4 cup shortening
  • 1 cup sugar
  • 1 cup molasses
  • 3 eggs
  • 1 cup milk
  • 4 cups flour
  • 1/2 teaspoon soda
  • 2 teaspoons baking powder
  • 1 teaspoon ginger
  • 1 teaspoon salt
  • 3 cups thick applesauce

Instructions

  1. Cream the shortening, then add sugar gradually, blending well.
  2. Add molasses and mix well.
  3. Add eggs, one at a time, beating after each addition.
  4. Add milk alternately with the sifted dry ingredients.
  5. Beat well after each addition.
  6. Pour the mixture into six greased and floured 9-inch pans, spreading to about 3/8 inch deep.
  7. Bake at 375°F (190°C) for 18 to 20 minutes.
  8. Cool the cakes and then stack with applesauce in between layers.
