Ingredients

  • 2 large yams or sweet potatoes
  • 2 large Granny Smith apples
  • 1 cup apple juice
  • 1 tablespoon cornstarch
  • 1/4 cup packed brown sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons margarine
  • 1/2 cup nuts

Instructions

  1. Boil the yams or sweet potatoes for about 15 minutes or until almost tender.
  2. Peel and slice the yams or sweet potatoes into 1/4 inch thick pieces.
  3. Use a 2-quart casserole dish.
  4. Gently toss the sliced yams and peeled, sliced apples together.
  5. In a separate bowl, stir together the apple juice and cornstarch, then add the brown sugar and lemon juice.
  6. Pour the juice mixture over the yams and apples, then dot with margarine.
  7. Cover the casserole and bake at 350°F for 20 minutes.
  8. Uncover and stir in the chopped nuts.
  9. Bake uncovered for an additional 10 minutes.
