Ingredients

  • 1 pkg. fresh carrots or about 1 1/2 lb.
  • 1 green pepper
  • 1 yellow onion
  • 1 c. sugar
  • 1/3 c. salad oil
  • 3/4 c. vinegar
  • 1 (10 3/4 oz.) can tomato soup
  • 1 tsp. salt
  • 1 Tbsp. coarse or freshly ground pepper

Instructions

  1. Peel carrots and slice lengthwise into slim strips about 4 inches long.
  2. Boil until tender but still crisp, about 10 to 15 minutes.
  3. Drain the carrots.
  4. Remove seeds and white membrane from inside the green pepper and cut into slim strips.
  5. Peel and thinly slice the onion and separate into rings.
  6. Lay all the prepared vegetables in an oblong dish measuring 8 x 12 x 1 1/2 inches.
  7. Bring sugar, salad oil, vinegar, tomato soup, salt, and pepper to a boil.
  8. Stir well and pour the hot mixture over the vegetables.
  9. Refrigerate until cool before serving.
