Ingredients

  • 2 eggs
  • 1 cup canned applesauce
  • 1 cup sugar
  • 1/3 cup vegetable oil
  • 3 Tbsp. milk
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 2 cups flour
  • 1 cup finely chopped pecans
  • 1/2 cup mixed candied fruit
  • 1/2 tsp. cinnamon

Instructions

  1. Beat eggs until foamy, then stir in applesauce, sugar, vegetable oil, and milk.
  2. Gradually add dry ingredients and stir in chopped pecans and mixed candied fruit, if desired.
  3. Spread the mixture in a greased 9 x 5 x 3 inch pan.
  4. Sprinkle cinnamon, brown sugar, and chopped pecans on top, pressing lightly with hand.
  5. Bake at 350°F for 1 hour.
  6. If the top gets too brown, sprinkle confectioners' sugar to cover during the last 30 minutes.
