Ingredients

  • 2/3 cup shortening
  • 2 2/3 cups sugar
  • 4 eggs
  • 1 cup canned applesauce
  • 1 cup mashed pumpkin
  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon mace
  • 1/2 teaspoon nutmeg
  • 2/3 cup apple juice
  • 1 cup walnuts or pecans, chopped

Instructions

  1. Cream together the shortening and sugar.
  2. Add eggs one at a time, beating after each addition.
  3. Stir in applesauce and pumpkin.
  4. Sift together the dry ingredients and add alternately with apple juice, mixing well.
  5. Stir in chopped nuts.
  6. Divide batter evenly into two greased 9x5x3-inch loaf pans.
  7. Bake at 350°F for one hour or until a toothpick inserted in the center comes out clean.
