Apriano Enchiladas
Ingredients

- 1 pound tomato puree ⓘ
- 3 cups duck broth
- 1/2 cup diced poblano ⓘ
- 1 cup diced onion ⓘ
- 4 cloves roasted garlic ⓘ
- 2 tablespoons chili powder ⓘ
- 2 tablespoons ground cumin ⓘ
- 4 tablespoons all purpose flour ⓘ
- salt/pepper ⓘ

- 2 pounds 85/15 ground beef
- 1/2 pound chorizo ⓘ
- 2 tablespoons ground cumin ⓘ
- 1 cup diced green chili
- 2 tablespoons srichacha ⓘ
Instructions
- Combine sauce ingredients and simmer for half hour - do the same with the fortifications. Allow to cool. Apply sauce to flour tortillas and fill with the fortifications, roll, and let set. Then bake at 350 degrees for a half hour and 225 degrees for 15 minutes. Baste with clarified butter prior to turning down temp. Add cheese to top to taste. Enjoy!
