Ingredients

  • 1/3 c. margarine, softened
  • 2/3 c. sugar
  • 2 eggs
  • 1 c. mashed ripe bananas (2 to 3 medium)
  • 1/4 c. buttermilk
  • 1 1/4 c. all-purpose flour
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. 100% bran cereal
  • 3/4 c. chopped dried apricots

Instructions

  1. In a mixing bowl, cream butter and sugar.
  2. Add eggs; mix well.
  3. Combine bananas and buttermilk.
  4. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with banana mixture.
  5. Stir in bran, apricots and nuts.
  6. Pour into a greased 9 x 5 x 3-inch loaf pan.
  7. Bake at 350° for 55 to 60 minutes or until bread tests done.
  8. Cool 10 minutes before removing from pan to a wire rack.
