Sweet and tangy apricot bars combine a buttery crust with a luscious apricot filling, perfect for dessert gatherings or afternoon tea with a burst of fruity flavor.

Ingredients

  • 2 cans peeled apricots, drained
  • 1/4 cup apricot juice
  • 1 3/4 cups sugar
  • 3/4 cup butter
  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1 small package coconut

Instructions

  1. Cook 3/4 cup sugar, 1/4 cup apricot juice, and drained apricots until slightly thickened.
  2. Cream together butter and 1 cup sugar.
  3. Blend in flour and baking soda.
  4. Stir in coconut and chopped walnuts.
  5. Place 3 cups of the mixture (very dry) in the bottom of a greased 12 x 8-inch pan.
  6. Pat down the mixture evenly.
  7. Bake for 10 minutes at 400°F (200°C).
  8. Remove from oven and spread the cooked apricot mixture over the partially baked crust.
  9. Sprinkle the remaining mixture on top.
  10. Bake in a 350°F (175°C) oven for 30 minutes or until golden brown.
