Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup butter
  • 1 teaspoon salt
  • 1/2 cup milk
  • 1 cup sugar
  • 2 teaspoons baking powder
  • 2 eggs
  • 1 (21 oz.) can apricot pie filling

Instructions

  1. Mix flour, sugar, baking powder, and salt; set aside 1/2 cup for the topping.
  2. Add eggs and milk to the remaining flour mixture and stir until combined.
  3. Spread the batter into a greased baking pan.
  4. Spread apricot pie filling evenly over the batter.
  5. Sprinkle the reserved crumb mixture over the apricot filling.
  6. Bake in a preheated oven at 350°F (175°C) for about 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before serving.
