A vibrant, sweet and creamy apricot salad combining fruity flavors with a smooth texture, perfect for festive occasions or special gatherings.

Ingredients

  • 2 (3 oz.) pkg. apricot jello
  • 2/3 cup sugar
  • 2/3 cup water
  • 2 (4 3/4 oz.) jars apricot baby food
  • 1 (20 oz.) can crushed pineapple (undrained)
  • 1 can sweetened condensed milk
  • 1 (8 oz.) pkg. cream cheese, softened

Instructions

  1. Combine jello, sugar, and water in a small saucepan; bring to boil, stirring to dissolve sugar and jello.
  2. Remove from heat and stir in apricot baby food and crushed pineapple.
  3. Set aside to cool.
  4. Combine sweetened condensed milk and softened cream cheese, beating until smooth.
  5. Stir in the cooled gelatin mixture and nuts.
  6. Pour into a dish and chill until firm.
