Ingredients

  • 6 oz. package orange Jell-O
  • 2 1/2 cups boiling water
  • 13 1/2 oz. can crushed pineapple, drained
  • 4 oz. can frozen orange juice concentrate
  • 11 oz. cans apricots, drained and chopped
  • 1 package instant lemon pudding mix
  • 1 cup cold milk

Instructions

  1. Dissolve the orange Jell-O in boiling water.
  2. Add the drained crushed pineapple and orange juice concentrate to the Jell-O mixture.
  3. Stir well and chill until partially set.
  4. Fold in the chopped drained apricots.
  5. Pour the mixture into a 9 x 13-inch pan and chill until firm.
  6. Meanwhile, beat the instant lemon pudding mix with cold milk until thickened.
  7. Fold in whipped cream into the pudding mixture.
  8. Spread the whipped pudding over the set Jell-O layer.
  9. Chill the salad until ready to serve and then serve chilled.
