Instructions

  1. Grease a 15 x 10 x 1-inch jelly roll pan.
  2. Line the pan with wax paper and set aside.
  3. Drain the apricot halves and sprinkle with 2 tablespoons of sugar.
  4. In a mixing bowl, beat 3 eggs until fluffy.
  5. Gradually add 1/2 cup sugar and continue beating.
  6. Sift together flour, baking powder, salt, and apple pie spice.
  7. Gently fold the dry ingredients into the egg mixture.
  8. Stir in the finely chopped hazelnuts or pecans.
  9. Pour the batter into the prepared pan and spread evenly.
