Ingredients

  • 1/2 cup margarine or butter
  • 1/2 cup sugar
  • 2 egg yolks
  • 1 1/4 cups sifted all-purpose flour
  • 1 cup apricot preserves
  • 2 egg whites
  • 1/3 cup sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease an 11 x 7 x 2-inch baking dish.
  3. In a bowl, blend margarine or butter, 1/2 cup sugar, and egg yolks together.
  4. Work in sifted all-purpose flour until the mixture is combined.
  5. Lightly flour your hands and pat the mixture into the prepared baking dish.
  6. Bake for 15 minutes.
  7. Remove from oven and spread evenly with apricot preserves.
  8. In a clean bowl, beat egg whites until foamy.
  9. Gradually beat in 1/3 cup sugar.
  10. Continue beating until meringue forms stiff, glossy peaks.
