Ingredients

  • 1 c. dried apricots, cut up
  • 1 c. boiling water
  • 1/2 c. butter, softened
  • 1 c. sugar
  • 3/4 c. sour cream
  • 2 c. all-purpose flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 Tbsp. grated orange peels
  • 1/2 c. chopped nuts

Instructions

  1. In a small bowl, combine apricots and boiling water.
  2. Let stand for 5 minutes.
  3. Drain and discard the liquid.
  4. Set apricots aside.
  5. In a mixing bowl, cream butter and sugar until fluffy.
  6. Add sour cream and mix well.
  7. Combine dry ingredients (flour, baking soda, salt) and add to the creamed mixture just until moistened.
  8. Fold in orange peels, nuts, and apricots.
  9. Fill paper-lined muffin pans 3/4 full.
  10. Bake at 400°F (200°C) for 18 to 20 minutes.
