Ingredients

  • 1/2 cup dried apricots
  • boiling water
  • 1 large orange
  • 1/2 cup raisins
  • 2 tablespoons margarine or butter
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup chopped nuts
  • 2 cups sifted flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cover dried apricots with boiling water and soak for about 30 minutes.
  3. Squeeze juice from the orange and add enough boiling water to make 1 cup.
  4. Save the orange peel for later use.
  5. Drain apricots and chop them into small pieces.
  6. In a mixing bowl, cream together margarine or butter and sugar.
  7. Add the egg and vanilla, and mix well.
  8. Stir in the chopped apricots, raisins, chopped nuts, and orange peel.
  9. In a separate bowl, sift together flour, baking powder, baking soda, and salt.
  10. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  11. Pour batter into a greased loaf pan.
  12. Bake in the preheated oven for about 50 minutes, or until a toothpick inserted into the center comes out clean.
  13. Allow to cool before removing from the pan and slicing.
