Ingredients

  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 1 teaspoon salt
  • 3/4 cup oleo
  • 2 cups rolled oats
  • 1 1/2 cups apricot preserves
  • 2 tablespoons butter
  • 1/2 cup chopped nuts

Instructions

  1. Combine flour, brown sugar, and salt in a mixing bowl.
  2. Cut in 3/4 cup oleo using a pastry blender until the mixture is crumbly.
  3. Stir in rolled oats and blend thoroughly.
  4. Set aside 1 1/2 cups of this mixture for topping.
  5. Press the remaining mixture into the bottom of a prepared baking pan.
  6. Spread apricot preserves evenly over the crust.
  7. Sprinkle the set-aside streusel mixture over the preserves.
  8. Melt 2 tablespoons of butter and drizzle over the top.
  9. Sprinkle chopped nuts evenly over the entire surface.
  10. Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes until golden brown.
  11. Allow to cool before cutting into bars.
