Ingredients

  • 1 1/4 cups boiling water
  • 1 cup quick oatmeal
  • 1 stick butter or margarine
  • 1 cup white granulated sugar
  • 1 cup brown sugar
  • 1 1/2 cups cake flour or 1 1/3 cups flour
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat oven to 350°F.
  2. In a large bowl, pour boiling water over oats and butter.
  3. Cover and let stand for 20 minutes.
  4. Add white sugar and brown sugar; blend well.
  5. Beat in eggs, then add flour, salt, cinnamon, baking soda, and nutmeg.
  6. Mix until well combined.
  7. Pour batter into a greased and floured 9 x 13-inch baking pan.
  8. Bake for 35 minutes.
