Armadillo Eggs are spicy, cheesy, bacon-wrapped jalapeno bites with a flavorful sausage core, perfect for appetizers, parties, or game day snacks with bold flavors.

Ingredients

  • 1 lb sausage
  • 1 cup Bisquick
  • 8 oz grated Monterey Jack cheese
  • 1 box Oven Fry for pork
  • 1 jar jalapenos
  • 2 eggs

Instructions

  1. Mix sausage, Bisquick, and grated Monterey Jack cheese together.
  2. Divide the mixture into oblong egg-sized balls.
  3. Make a crease down the center of each ball and insert a jalapeno pepper.
  4. Close the sausage mixture around the jalapeno, forming an egg shape.
  5. Roll the formed eggs in beaten eggs, then coat with Oven Fry or Shake 'n Bake.
  6. Place on a baking sheet and bake at 350°F for 30 minutes.
