Ingredients

  • 14 oz. can artichoke hearts, drained and divided
  • 2 Tbsp. margarine
  • 2 Tbsp. all-purpose flour
  • 1/8 tsp. ground nutmeg
  • dash of pepper
  • 2 c. skim milk
  • 1 c. water
  • 1 tsp. chicken flavored bouillon granules
  • 1 tsp. fresh lemon juice
  • 4 twists fresh lemon

Instructions

  1. Chop 2 artichoke hearts and set aside.
  2. Place remaining artichoke hearts in a food processor and puree.
  3. Melt margarine in a saucepan over low heat.
  4. Add flour, ground nutmeg, and pepper to the melted margarine.
  5. Cook for 1 minute, stirring occasionally.
  6. Gradually add milk, water, bouillon granules, and lemon juice, stirring occasionally.
  7. Add the reserved chopped artichoke hearts and the pureed artichokes.
  8. Stir well and cook over medium heat for 10 minutes or until thickened and bubbly.
  9. Garnish each serving with a lemon twist.
