Aruba Cucumber Lamb

Ingredients

  • 3 lb boneless lamb meat
  • salt to taste
  • pepper to taste
  • 3 Tbsp oil
  • 2 medium onions
  • 2 celery stalks
  • 1 green pepper
  • fresh hot chilies or 3/8 tsp dried crushed red pepper
  • 2 garlic cloves
  • 3/8 tsp pepper
  • 1 1/2 cups water
  • 2 cucumbers peeled, seeded and shredded
  • 1 cucumber peeled in strips and sliced thin

Instructions

  1. Season the lamb meat with salt and pepper.
  2. In a large kettle, brown the lamb meat in oil.
  3. Remove the browned meat and set aside.
  4. Drain the kettle, reserving 3 tablespoons of oil.
  5. Add the onions, celery, green pepper, and fresh hot chilies (if using) to the kettle and sauté until limp.
  6. Return the meat to the kettle along with dried, crushed red pepper (if using), garlic, pepper, and water.
  7. Cover and simmer for 2 hours, adding more water if necessary.
  8. Add shredded cucumbers and tomato wedges before serving.
