Ingredients

  • 1 bunch asparagus
  • 1 small onion
  • 3 eggs
  • 1/2 cup vegetable oil
  • 1 cup Bisquick
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1/2 cup grated Mozzarella cheese

Instructions

  1. Rinse the asparagus and cut into small pieces.
  2. Mince the onion and grate the mozzarella cheese.
  3. Mix the asparagus, onion, mozzarella, Bisquick, salt, pepper, and oregano together.
  4. Pour the mixture into a greased casserole dish.
  5. Beat the eggs and vegetable oil together.
  6. Pour the egg mixture over the casserole.
  7. Bake at 350°F for 40 minutes, uncovered.
  8. Serve while still warm.
