Ingredients

  • 1/4 cup butter
  • 1/2 pound fresh asparagus, cut into pieces, cooked
  • 2 or more cups chopped cooked chicken
  • 1/4 pound grated sharp cheese
  • 1 can cream of chicken soup
  • 1 tablespoon lemon juice
  • chopped pimiento
  • 1 (8 oz.) package corn muffin mix

Instructions

  1. Melt butter in an 8-inch square pan.
  2. Drain cooked asparagus, reserving 1/2 cup of asparagus liquid.
  3. Arrange the asparagus in the melted butter in the pan.
  4. Add the cooked chopped chicken on top of the asparagus.
  5. Sprinkle grated sharp cheese over the chicken and asparagus.
  6. Prepare the corn muffin mix according to package directions.
  7. Carefully spoon the muffin batter on top of the cheese layer.
  8. Bake in a 400°F oven for 30 minutes or until the muffin top is browned.
