Asparagus Strudel
A flaky puff pastry filled with tender asparagus, Swiss cheese, and herbs, baked to golden perfection — perfect for elegant brunches or light dinners.

- Preheat oven to 350°F (175°C).
- In a large skillet, sauté asparagus and chopped onion in butter for 2 to 3 minutes.
- Cool the mixture for 10 minutes.
- Stir in chopped dill, shredded Swiss cheese, bread crumbs, lemon juice, Dijon mustard, salt, pepper, and 1 beaten egg.
- On a floured surface, roll out the thawed puff pastry to a 10 1/2 x 11 1/2-inch rectangle.
- Place the asparagus mixture lengthwise along the center of the pastry.
- Brush 1/3 of the beaten egg along the empty edges of the pastry.
- Fold sides over the filling to overlap and cover it, sealing the edges.
- Place seam side down on a baking sheet.
- Brush the top with the remaining beaten egg.
- Cover with dill sprigs.
- Bake for 45 to 50 minutes until golden brown.
- Cool for 5 minutes before serving.
