Asparagus Strudel

Ingredients

  • 1 lb. thin asparagus
  • 1 onion, chopped
  • 2 Tbsp. butter
  • 2 Tbsp. chopped fresh dill or 2 tsp. dried dill
  • 1 cup shredded Swiss cheese
  • 1 cup dry bread crumbs
  • 1 Tbsp. lemon juice
  • 1 tsp. Dijon mustard
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 eggs, divided and lightly beaten

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, sauté asparagus and chopped onion in butter for 2 to 3 minutes.
  3. Cool the mixture for 10 minutes.
  4. Stir in chopped dill, shredded Swiss cheese, bread crumbs, lemon juice, Dijon mustard, salt, pepper, and 1 beaten egg.
  5. On a floured surface, roll out the thawed puff pastry to a 10 1/2 x 11 1/2-inch rectangle.
  6. Place the asparagus mixture lengthwise along the center of the pastry.
  7. Brush 1/3 of the beaten egg along the empty edges of the pastry.
  8. Fold sides over the filling to overlap and cover it, sealing the edges.
  9. Place seam side down on a baking sheet.
  10. Brush the top with the remaining beaten egg.
  11. Cover with dill sprigs.
  12. Bake for 45 to 50 minutes until golden brown.
  13. Cool for 5 minutes before serving.
