  • 1 1/2 large onions
  • 1 1/2 c. carrots
  • 1 large bell pepper
  • 1 1/2 c. sugar
  • 1 1/2 c. mustard
  • 1/2 c. white vinegar
  • 1 Tbsp. black pepper
  • 1 Tbsp. salt
  • 1 Tbsp. red pepper

Instructions

  1. Grate the cabbage, onions, carrots, and bell pepper.
  2. Mix the grated vegetables with sugar, mustard, vinegar, black pepper, salt, and red pepper until well combined.
  3. Simmer the mixture for 3 minutes.
  4. Combine all ingredients and simmer for an additional 30 minutes.
  5. Can, freeze, or refrigerate the hot slaw for storage.

Tips & Substitutions

For a milder flavor, reduce the amount of black and red pepper. Instead of using white vinegar, apple cider vinegar can add a nice sweetness. If you're short on time, pre-shredded coleslaw mix can be used for the cabbage and carrots, but fresh vegetables will yield the best texture. This hot slaw pairs beautifully with Henry'S Barbecue.

Serving Suggestions

This hot slaw is a delicious side dish for barbecued meats and sandwiches. It complements dishes like Lois'S Rolls or can be used as a topping for pulled pork sandwiches. For a complete meal, serve it alongside a hearty salad or try pairing it with the Carrot Sandwich Filling for a unique lunch option.

Storage & Reheating

Store leftovers in an airtight container in the refrigerator for up to a week. To reheat, gently warm the slaw in a saucepan over low heat, stirring occasionally until heated through. You can also serve it cold for a refreshing side dish or topping.
