Ingredients

  • 3 eggs
  • 1 1/2 cups sugar
  • 1 cup oil
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 cup sour cream
  • 3 cups flour
  • 1/2 cup chopped nuts
  • 1/2 cup raisins
  • 2 cups grated zucchini

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease three loaf pans.
  3. Mix eggs, sugar, oil, vanilla, cinnamon, salt, baking soda, and baking powder until well combined.
  4. Add flour gradually and mix thoroughly.
  5. Fold in grated zucchini, chopped nuts (if using), and raisins (if using).
  6. Pour batter into prepared loaf pans.
  7. Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and cool before removing from pans.
