- Preheat oven to 350°F (175°C).
- Grease three loaf pans.
- Mix eggs, sugar, oil, vanilla, cinnamon, salt, baking soda, and baking powder until well combined.
- Add flour gradually and mix thoroughly.
- Fold in grated zucchini, chopped nuts (if using), and raisins (if using).
- Pour batter into prepared loaf pans.
- Bake for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and cool before removing from pans.
