Authentic Ratatouille *

Authentic ratatouille features a colorful medley of eggplant, zucchini, peppers, and tomatoes, simmered with herbs for a rich, flavorful vegetarian dish suitable for any occasion.

Ingredients

  • 6 Tbsp. olive oil
  • 1 eggplant
  • 3/4 lb. zucchini
  • 3/4 lb. coarsely chopped onions
  • 1/2 lb. sweet red peppers
  • 1 Tbsp. crushed garlic
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • salt
  • fresh ground pepper

Instructions

  1. Heat 5 tablespoons of olive oil in a large heavy skillet and when hot, add the eggplant.
  2. Cook, stirring, about 3 minutes, then remove with a slotted spoon and drain in a colander with a bowl underneath.
  3. Add zucchini to the skillet with salt and pepper; cook about 3 minutes.
  4. Add the zucchini to the eggplant.
  5. Add the remaining oil, plus any oil that has accumulated in the bowl, to the pan with onions and peppers and cook until wilted.
  6. Add the eggplant, zucchini, salt, pepper, and thyme to the skillet.
  7. Cook about 5 minutes, stirring occasionally.
  8. Add the chopped tomatoes and stir well.
  9. Cover and simmer for 20 minutes.
  10. Uncover and cook for about 10 minutes to reduce the liquid.
  11. Taste and serve at room temperature.
