Authentic Ratatouille *
Authentic ratatouille features a colorful medley of eggplant, zucchini, peppers, and tomatoes, simmered with herbs for a rich, flavorful vegetarian dish suitable for any occasion.

- Heat 5 tablespoons of olive oil in a large heavy skillet and when hot, add the eggplant.
- Cook, stirring, about 3 minutes, then remove with a slotted spoon and drain in a colander with a bowl underneath.
- Add zucchini to the skillet with salt and pepper; cook about 3 minutes.
- Add the zucchini to the eggplant.
- Add the remaining oil, plus any oil that has accumulated in the bowl, to the pan with onions and peppers and cook until wilted.
- Add the eggplant, zucchini, salt, pepper, and thyme to the skillet.
- Cook about 5 minutes, stirring occasionally.
- Add the chopped tomatoes and stir well.
- Cover and simmer for 20 minutes.
- Uncover and cook for about 10 minutes to reduce the liquid.
- Taste and serve at room temperature.
