Autumn Bisque
Ingredients
- 1/2 c. chopped leek ⓘ
- 1/2 c. chopped onion
- 1/2 c. finely chopped celery ⓘ
- 2 large apples, chopped ⓘ
- 1/4 c. butter ⓘ
- 2 Tbsp. flour ⓘ
- 1 c. grated Cheddar cheese ⓘ
- 1/2 c. light cream ⓘ
- 7 c. chicken or turkey stock ⓘ
- 4 c. peeled, diced butternut squash ⓘ
- 1 tsp. thyme ⓘ
- 1 tsp. salt ⓘ
- 1/2 tsp. sage ⓘ
- 1/4 tsp. turmeric ⓘ
- 1/4 tsp. rosemary ⓘ
- pinch of nutmeg ⓘ
- pepper to taste ⓘ
Instructions
- Saute vegetables and apples in butter.
- Stir in flour and cook.
- Add stock and simmer 10 minutes.
- Add squash and cook.
- Add seasonings.
- Add cider and cream; heat through.
- Remove from heat. Stir in cheeses.
- Garnish with croutons.
