Ingredients

  • 1 lb. Muenster or Jack cheese, shredded
  • 1/2 cup melted margarine
  • 1 teaspoon baking powder
  • 1 pint cottage cheese
  • 1/2 cup sifted flour
  • 12 eggs
  • salt
  • pepper

Instructions

  1. Melt the margarine in a 9 x 13-inch Pyrex dish.
  2. Sift the flour with the baking powder.
  3. Beat the eggs and season lightly with salt, pepper, and Tabasco.
  4. Add 5 to 6 drops of Tabasco sauce to the egg mixture.
  5. Stir in the sifted flour, diced ham, shredded cheese, cottage cheese, and most of the melted margarine.
  6. Swirl the rest of the margarine around in the dish to coat evenly.
  7. Pour the egg mixture into the prepared dish.
  8. Bake at 400°F for 15 minutes.
  9. Reduce the oven temperature to 350°F and bake for an additional 10 to 15 minutes until puffed and golden brown.
  10. Cut into squares and serve.
