Ingredients

  • 4 cups red potatoes
  • 1/4 cup green onion
  • 2 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 slices bacon
  • 2/3 cup salad dressing

Instructions

  1. Cook the red potatoes until tender, then let them cool and cut into chunks.
  2. Boil the eggs until hard-boiled, then peel and chop them.
  3. Cook the bacon until crispy, then drain and crumble.
  4. Sauté or chop green onions.
  5. In a large mixing bowl, combine the potatoes, eggs, bacon, and green onions.
  6. Add salt and pepper to taste, then mix in the salad dressing until well coated.
  7. Serve chilled or at room temperature.
