Ingredients

  • 1 lb. lean bacon
  • 1 cup shredded sharp cheese
  • 1/2 cup chopped onion
  • 1 1/2 cups milk
  • 3 eggs
  • 1 cup biscuit mix
  • 1/8 tsp. pepper

Instructions

  1. Heat oven to 400°F.
  2. Grease a 10-inch pie plate.
  3. Sprinkle the cooked, crumbled bacon, chopped onion, and shredded cheese evenly in the pie plate.
  4. In a blender or processor, combine the milk, beaten eggs, biscuit mix, and pepper. Blend on high for about one minute until smooth.
  5. Pour the batter into the prepared pie plate over the layered ingredients.
  6. Bake for 35 to 40 minutes, or until a knife inserted in the center comes out clean.
  7. Cool for 5 minutes, then cut into wedges.
  8. Serve with salad.
